INGREDIENTS

3 eggs

3 corn tortillas

4 jalapeño peppers

1/2 red onion

1 small can tomato sauce

grated mild cheddar cheese

salt pepper oregano
Instructions
Dice peppers and onion and saute in vegetable oil. Add tomato sauce salt pepper and oregano. Bring to a boil while stirring. Fry eggs to taste. Heat tortillas in microwave, place tortilla on plate, place egg on tortilla, and cover egg with pepper onion sauce. Sprinkle shredded cheese on top.
