Connie's Waffles

Breakfast Waffles


4 cups quick-cook oats

1/4 cup cornmeal mix

1/4 cup safflower oil

4 cups 2% or whole milk

1 tsp salt

1 Tbsp lemon juice

1 tsp vanilla extract

Optional blueberries, if desire


Mix all the ingredients together and let stand for 2 hours or overnight in the refrigerator. Stir to remix and bake on hot waffle iron for 6-7 minutes, depending on crispness.
