Leek & Goat Cheese Quiche


6 eggs
1.5 C heavy whipping cream
1 leek
1/4 c herb goat cheese
1 cup
salt n pepper
pie crust (homemade is best)


Whisk eggs and heavy cream and salt and pepper together.

Slice the leeks and lay the slices (save a few for the top) down in the pie crust. Crumble the goat cheese on top.

Pour in the egg mixture and place a few leeks on top. Bake at 350 for 30-40 minutes.

Check at 30 minutes by shaking the pie pan. If it jiggles it isn't done yet.
