Berry Oatmeal Muffins

A delicious breakfast muffins."


1 1/2 Cup Old fashioned Oats
1 1/2 Tablespoons old fashioned Oats, divided
1/2 cup brown sugar, packed plus 1 1/2 tablespoons packed, divided
1 cup all purpose flour
1 tablespoon baking powder
1/2 teaspoon cinnamon
1 cup strawberry yogurt
4 tablespoon butter, softened
1 egg
1 teaspoon vanilla
1 cup blueberries (fresh or frozen)


Prepare muffin pan w/cooking spray; Preheat oven to 400 degrees
1. Combine 1 1/2 tablespoon of brown sugar & oats and set aside
2. In mixer combine oats, sugar, flour baking powder and cinnamon
3. Add to mixer yogurt, butter, egg and vanilla.
4. Mix until blended
5. Fold in blueberries
6. Fill muffin cups 2/3
7. Sprinkle reserved oats & sugar
8. Bake 18-20 minutes
