Poached egg w/ bruschetta

Poached egg served on artisan Bread with Swiss cheese and marinated tomatoes with basil and virgin olive oil. "


4 poached eggs (boil 3 parts of water 1 part of white vinegar to poach eggs)
4 slices artisan bread, focaccia, asiago cheese
2 slices Swiss cheese, on top of poached eggs
1 diced, small romao/ plum tomato
2 tablespoons virgin olive oil
4 leaves basil, chopped


Poach 4 eggs and toast 4 sliced of Artisan Bread
Put cheese on top of poached eggs. Add diced marinated tomatoes with basil, olive oil, salt, and pepper to taste on top. Sprinkle a dash of balsamic vinegar around the plate
Marinate. Make 1 day ahead for better taste
