Ingredients
1 Cup oil
2 Cups sugar
3 eggs
1 teaspoon vanilla
3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
½ ground ginger
1 Tbsp cinnamon
3 cups shredded zucchini
1 cup raisins
1 cup chopped walnuts

Instructions
-beat together oil and sugar
-add eggs and vanilla
-combine flour, baking powder & soda,salt, ginger, cinnamon, add to mixture
-combine zucchini, raisins, nuts, add to mixture
2 6" loaf pans, spray with no-stick spray and line with strips of wax paper
-pour batter evenly
Bake at 325, 2" from bottom rack.
60-65 minutes
