The best leftover chicken sandwich

Ingredients

Leftover grilled or baked chicken (1 breast or so will do)
Marinated red pepper (enough to cover chicken)
Garlic spread
Ciabatta bread
Mozzarella or Provolone cheese (1 slice)

Instructions

1. Liberally coat both inside surfaces of the bread with garlic spread
2. Slice chicken in 1/4-1/2 wide slices, lay on top of garlic laden bread
3. Cover chicken with marinated pepper and cheese. Sandwich should have just enough cheese to bind chicken and peppers together, not be excessively cheesy
4.Grill using panini press or on griddle with weighted pot on top until golden brown; flip and repeat
