Pumpkin Bread

Ingredients

3 ½ cups flour (I use a mixture of whole wheat, wheat germ & unbleached white..but all white is okay) ½ ts baking pwdr 2teaspoon salt 1teaspoon cinnamon ½ teaspoon ground cloves ½ teaspoon ginger (optional..but I like the zing) 1 cup white sugar 1 cup light or dark brown sugar (I like the dark) ⅔ cup shortening 4 eggs 1 can 15 oz. pumpkin or 15 oz. pureed roasted pumpkin ⅔ cup milk 1 teaspoon pure vanilla extract

Instructions

Preheat oven to 350 F. Mix together milk & vanilla in small bowl. Sift together flour and spices. In a large bowl, beat sugar, shortening & eggs until fluffy then mix in pumpkin. Slowly mix in sifted ingredients alternating with milk mixture until all blended. Pour into one tube pan or 2 loaf pans. Bake 1 hour. Enjoy!
