1/2 cup sugar 1/2 cup vegetable oil 1/2 cup 3/4 cup pumpkin puree 2 eggs 1 1/2 cup unbleached flour 1 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1/4 tsp salt

In a large bowl, beat together sugar, oil, pumpkin and eggs. In a medium bowl, stir together flour, baking powder, soda, cinnamon, and salt. Fold this into the pumpkin mixture, stirring to moisten the dry ingredients. Pour batter into a grease pan 9" X 5" X 3" loaf pan. Bake bread in a preheated 350 degree oven for an hour (or until a tester comes out dry. Set the pan on a rack for 10 minutes and turn out the loaf to cool completely.
