Pumpkin Bread

This is a wonderful pumpkin bread that could be used anytime during the day as a snack or dessert. It is pumpkin bread with a caramel glaze melted over it.

3 cups Sugar 2 cups of Pumpkin 4 Eggs 1 cup of Oil 3 ½ cups of flour ⅔ cups of Warm Water 2 teaspoon dissolved Soda 1 teaspoon Cinnamon 1 teaspoon Nutmeg 1½ teaspoon Salt 2 teaspoon Vanilla Caramel Glaze: 6 tablespoon Brown Sugar 3 tablespoon Unsalted Butter 3 tablespoon Water

Mix sugar, oil, eggs & pumpkin. Separately combine flour, cinnamon, nutmeg & salt. Add to pumpkin mixture. When combined, add soda dissolved in warm water & vanilla. Grease bread pans. Before baking, sprinkle with 1 cup chopped pecans. Cool slightly. Combine 6 tablespoons of brown sugar, 3 tablespoons butter & 3 tablespoons water. Bring to boil. Will be thin. Pour over warm bread.
