My family loves these Elvis inspired muffins. My son says they are the best he's ever had.

5 extra large muffins
Ingredients
3 very ripe bananas
⅓ cup crunchy peanut butter
¼ cup brown sugar
¼ cup plain yogurt
1 large egg
1 Tbsp canola oil
1 teaspoon almond flavoring
1 cup whole wheat flour
½ cup rolled oats
¼ cup flax seeds
1½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup white chocolate chips (optional)

Instructions
1. Preheat oven to 375°F. Spray extra large muffin tins with nonstick cooking spray, or use paper liners. In a large mixing bowl, mash bananas. Add peanut butter, brown sugar, egg, yogurt, oil, and almond flavoring. Mix well.
2. In a separate bowl, mix dry ingredients, except for white chocolate chips. Gently blend dry and wet ingredients, until barely mixed. Fold in white chocolate chips.
3. Divide mixture into 5 extra large muffins compartments. Bake 25 - 30 minutes until tops spring bake when touched, or toothpick inserted comes out clean.
