2 ounces Parmesan cheese, cut into pieces1 package active dry yeast⅛ teaspoon sugar⅓ cup warm water (105° - 115°F.)3 cups all-purpose flour¾ teaspoon salt⅔ cup cold water2 tablespoons olive oilOlive oilCoarse salt
Preparation
In a Cuisinart® food processor fitted with the metal blade, process cheese until finely chopped, about 45 seconds. Reserve and wipe work bowl clean.In a 2-cup liquid measure, stir yeast and sugar into warm water. Let stand until foamy, about 3 - 5 minutes.Add flour and salt to work bowl. Add cold water and 2 tablespoons of oil to yeast mixture and, with motor running, pour liquid through feed tube as fast as flour absorbs it, about 35 seconds.Once dough pulls away from side of bowl, process until dough is well kneaded, about 40 seconds.Place dough in a lightly floured food storage bag. Let rise in a warm place until doubled in size, about 30 - 40 minutes.Divide dough into 24 equal pieces. With hands, roll each piece into a thin 10 - 12" stick. Sprinkle a small amount of cheese on a work surface and roll each stick in the cheese to coat the surface.Place on baking sheet coated with vegetable oil cooking spray and cover with plastic wrap coated with vegetable oil cooking spray. Let rise 15 minutes. Preheat oven to 300°F.Bake until crisp and lightly colored, about 25 - 30 minutes. Increase oven temperature to 400°F. and bake until golden brown, about 4 - 5 minutes. Cool on wire racks.
