Even as a picky kid, I still liked this bread!
Yields
2 Loaves
Ingredients
3 eggs
2 cups sugar
1 cup oil
1 teaspoon vanilla
3 cups flour
½ teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
½ c chopped nuts
2 cups shredded zucchini

Instructions
sift dry ingredients together and set aside
beat eggs and sugar until light and fluffy
blend oil zucchini and vanilla in blender until smooth
add to egg and sugar mixture and mix together
sift dry ingredients into batter gradually
and pour batter in to 2 greased loaf pans
bake @ 325 for 1 hr
cool ½ hr and remove from pans
