This cornbread recipe makes really moist bread while most cornbreads can be dry and crumbly. It is also healthy and a little bit sweet which makes it a good snack as well.
1 1/2 cups cornmeal
2 cups flour (1/2 white, 1/2 whole wheat pastry flour)
1/4 cup brown sugar (not packed)
4 tsp. baking powder
1 15 oz. can of creamed corn
1 1/2 cups milk or soy milk
1/2 cup sour cream
1/4 cup shortening

Mix flours, sugar and baking powder together. Add milk, sour cream and creamed corn to dry ingredients. Mix together. Mix in shortening. Add eggs one at a time.
Spray baking pan. Place batter into a 9" x 12" or large square baking pan.
Heat oven to 450 degrees and bake for about 30-35 minutes or until the toothpick comes out clean.
