A moist & delicious zucchini bread

Ingredients

2/3 cup shortening 2 2/3 cups sugar 4 eggs 3 cups shredded zucchini 2/3 cup water 3 1/3 cups flour 2 tsp baking soda 1 1/2 tsp salt 1/2 tsp baking powder 1 tsp cinnamon 1 tsp ground cloves 2 tsp vanilla 2/3 coarsely chopped nuts 1 cup chocolate chips

Instructions

Preheat oven to 350 degrees. Grease bottoms only of the 3 loaf pans. Mix together the shortening & sugar. Add the eggs, zucchini, & water. Blend in the flour, soda, salt, baking powder, cinnamon, cloves, & vanilla. Stir in the nuts & chocolate chips. Pour the batter into the 3 pans. Bake for 60-70 minutes. Cool slightly. Loosen the sides & remove from pans. Cool completely. Wrap & refrigerate for up to 10 days, or freeze.
