Mike's Italian Bread

A nice round bread for dipping in your favorite oil and vinegar mix

¾ cup hot water 2 tablespoons sugar 2 tablespoons dry yeast 3-4 cups shifted flour 2-3 large cloves garlic minced 1 tablespoon kosher salt 1 - 1½ tablespoons Italian seasoning ¼ cup shredded fresh Parmesan cheese ¼ cup shredded fresh Romano cheese ⅓ cup olive oil ¼ cup red wine (or water)

In med bowl mix sugar and yeast into hot water and set aside for 5 min, in large bowl mix 3 cups flour with next 5 ingredients. Add yeast mixture , oil and wine to flour mixture and blend to form a soft dough (add flour as needed) and turn out to floured surface and knead for 5 min, return to oiled bowl and cover to rise for 30 mins. Turn out to floured surface and form into a pancake ~ 8" round, transfer to cookie sheet brush with olive oil and let rise for 20 to 30 min. heat oven to 365 deg and place a pan of water on lowest rack, bake bread for 20 min or till light brown, transfer to wire cooling rack and brush with olive oil and return to oven for ~10 mins (or till golden brown). Remove let cool and enjoy
