Lo-Carb Cauliflower "Bread"

This "bread" is a great substitute for diabetics and those who cannot eat gluten. This "bread" can also be used as a base for pizza, tacos, and the like

1 head of cauliflower 4 oz Parmesan cheese 2 eggs ½ cup soy flour ½ cup coconut flour 1 teaspoon. salt 1-2 cloves garlic cooking spray

Cut cauliflower into bite sized pieces; lightly coat with cooking spray and roast in oven at 350 for 30-45 min. till lightly browned. Meanwhile, shred the Parmesan cheese in the Cuisinart on pulse to mid to large sized pieces. Set aside. When cauliflower is done, cook then pulse in the Cuisinart till it makes fine to small pieces. Add eggs, soy flour, coconut flour, salt and garlic and pulse to mix. Add the cheese and gently pulse to mix. Spread on a lightly greased parchment paper on an 11" x 13" baking sheet. Spread till about ⅛" thick. Bake at 350 for about 15 minutes till golden brown. Cool, cut and serve or use as the base for pizza or tacos.
