Ingredients

  • 1 cup warm water (105°F to 110°F)
  • 1 tablespoon honey
  • 2 teaspoons active dry yeast
  • 1½cups whole-wheat flour
  • ¾cup bread flour
  • ¾teaspoon salt
  • 1½tablespoons unsalted butter,
  • cut into ½-inch pieces,
  • room temperature
  • Nonstick cooking spray or unsalted
  • butter, softened, for greasing the
  • loaf pan

Preparation

  1. 1. Put the warm water, honey, and yeast into
  2. a large mixing bowl. Stir to dissolve the
  3. yeast and let stand for 5 to 10 minutes.
  4. Mixture will foam and bubble – this
  5. means the yeast is active and alive.
  6. 2. Put the flours and salt in a separate mixing
  7. bowl. Using the beaters, mix on Speed 1
  8. for 20 to 30 seconds; reserve. Using the
  9. dough hooks, mix the yeast mixture on
  10. Speeds 1 to 2 while adding the flour/salt,
  11. ½ cup at a time. Mix in each addition of
  12. flour, before adding the next, so that no
  13. flour is visible in between. The dough at
  14. first will be a batter, and slowly, as the flour
  15. is added, the batter will form a rough
  16. dough ball. (If a good amount of dough is
  17. clinging to the walls of the bowl, add an
  18. additional 1 to 3 tablespoons of bread
  19. flour; avoid adding more).
  20. 3. Once all of the flour has been incorporated,
  21. add the butter and knead on Speed 3
  22. for about 2 minutes. The dough will feel
  23. sticky. Dust the dough ball lightly with flour
  24. and place it in a resealable food storage
  25. bag, pressing out any air before sealing.
  26. Let rise in a warm, draft-free place until
  27. doubled in size, about 1 hour.
  28. 4. Lightly coat one standard loaf pan with
  29. cooking spray or unsalted butter. Punch
  30. dough to deflate. Shape into loaf and
  31. place in prepared pan. Cover and let rise
  32. until nearly doubled, about 1 hour.
  33. 5. About 15 minutes before baking, preheat
  34. oven to 400°F. Place loaf in preheated
  35. oven and bake for 30 to 35 minutes, until
  36. bread is browned and sounds hollow
  37. when tapped. Remove from loaf pan and
  38. cool on a wire rack. Bread slices best
  39. when allowed to cool completely before
  40. cutting. Crust will soften as it cools.
