If you have never tasted fresh, homemade flour tortillas then we strongly suggest you give these a try. Simple and quick to prepare, they will make store-bought tortillas a thing of the past.

Ingredients

  • 2½ cups unbleached all-purpose flour plus more for dusting
  • 1 teaspoon kosher salt
  • 6 tablespoons vegetable shortening, room temperature
  • ¾ cup warm water
  • Canola oil for brushing

Preparation

  1. Insert the universal blade into the work bowl of the Cuisinart® 7-Cup Food Processor. Add the flour and salt and process to sift. Add the shortening and pulse until the shortening is well coated with flour. With the unit running, slowly add the water through the feed tube. Continue to process for 40 seconds to knead. The dough should be soft and smooth.
  2. Turn the dough out onto a lightly floured work surface and knead for another minute or two by hand to soften some more.
  3. Divide the dough into 10 equal pieces and shape into rounds. Loosely cover the rounds with plastic wrap and let them sit for 30 minutes to 1 hour.
  4. Preheat a griddle over medium-high heat. Working with one dough ball at a time and keeping the rest covered, roll the dough into a 6-inch circle, about ⅛ inch thick. Once the griddle is hot, brush the surface with oil and place the dough on the griddle. Cook, turning the tortilla every 1½ to 2 minutes, until browned in spots and cooked through but still pliable. The dough will puff as it cooks.
  5. Remove the tortilla to a plate and cover with a damp paper towel or clean towel to keep warm. Continue cooking the remaining tortillas in the same manner. Serve with desired accompaniments
