Coffee Date Nut Bread

I have been tweaking this recipe for the past 5 years and it is my family's favorite comfort food when it starts getting chilly outside. It is important to use very strong coffee and soak the dates in the coffee as directed.




1 cup chopped dates (pitted) 1 teaspoon baking soda 1 cup steaming hot water 2 tablespoons coffee grounds 2 tablespoons butter, softened 1 cup sugar 1 egg 1 teaspoon vanilla extract (double strength) 1 ½ cups all purpose flour 1 teaspoon salt 1 cup chopped nuts (walnuts or pecans)

Preheat oven to 350 degrees F Line bottom of bread pan with parchment paper (cut to fit) Spray pan with oil Put coffee grounds in 1 cup of steaming hot water, let soak for 4 minutes, strain, discard coffee grounds. In a bowl with the dates, sprinkle with baking soda and pour hot coffee over the dates. Let it soak while you get the rest of the ingredients ready. In a separate bowl, beat butter and sugar until light and fluffy. Add egg, and vanilla. Mix in flour, salt, and nuts. Add date mixture to the flour mixture. Pour into pan Bake for 1 hour Let it cool for 10 minutes and turn out onto a cooling rack. Enjoy.
