Coconut-Zucchini Bread

3 eggs 1 cup olive oil 2 cups sugar 2 teaspoon vanilla 3 cups whole wheat flour 1 teaspoon salt 1 teaspoon soda 2 teaspoon baking powder 1 teaspoon cinnamon ¼ teaspoon nutmeg 1½ cups zucchini - shredded ½ cup flaked coconut Turbinado Sugar for topping (optional)

Preheat 350 Beat Eggs, Oil, Sugar & Vanilla. Mix Dry ingredients, excluding Zucchini & coconut. Add dry ingredients slowly to Egg mixture, stirring until just combined. Fold in Zucchini and Coconut. Divide mixture between 2 well greased and floured loaf pans. Sprinkle lightly with Turbinado Sugar. Bake 45-60min, until toothpick inserted in center comes out clean.
