Boston Brown Bread

Traditionally served with baked beans, it is also delicious when smeared with salted butter or cream cheese.


Makes 1 loaf, about 12 servings


1        cup buttermilk

⅔        cup molasses

1        cup whole-wheat flour

¼       cup cornmeal

½       teaspoon kosher salt

½       teaspoon baking soda

½       teaspoon baking powder

½       teaspoon grated orange zest

½       cup pitted dates, chopped

          Nonstick cooking spray

Put all of the ingredients, except for the dates, into a large
mixing bowl. Whisk until well combined. Stir in the dates.

Lightly coat a 9-inch loaf pan with nonstick cooking spray. Transfer the batter to the pan and cover with foil. Put the pan onto the tray inside the steamer. Secure lid.

Select Manual, set timer for 40 minutes and press Start.

Once the timer expires, carefully remove the pan and
transfer to a cooling rack. Remove foil and allow to cool completely before serving.
