Traditionally served with baked beans, it is also delicious when smeared with salted butter or cream cheese.

Ingredients

  • 1cup buttermilk
  • ⅔ cup molasses
  • 1cup whole-wheat flour
  • ¼cup cornmeal
  • ½teaspoon kosher salt
  • ½teaspoon baking soda
  • ½teaspoon baking powder
  • ½teaspoon grated orange zest
  • ½cup pitted dates, chopped
  • Nonstick cooking spray

Preparation

  1. Put all of the ingredients, except for the dates, into a large
    mixing bowl. Whisk until well combined. Stir in the dates.
  2. Lightly coat a 9-inch loaf pan with nonstick cooking spray. Transfer the batter to the pan and cover with foil. Put the pan onto the tray inside the steamer. Secure lid.
  3. Select Manual, set timer for 40 minutes and press Start.
  4. Once the timer expires, carefully remove the pan and
    transfer to a cooling rack. Remove foil and allow to cool completely before serving.
