Soft and sweet banana muffins with a crisp oat texture on the outside. These are healthy and delicious! The darker and riper the bananas you use, the sweeter the muffins will be.

3 very ripe bananas ⅓ cup brown sugar ¼ teaspoon nutmeg ¼ teaspoon cinnamon 1 cup old fashioned oats 1 cup white whole wheat flour ¼ cup wheat germ ¼ cup ground flax seeds ¼ teaspoon salt 2 teaspoon baking powder 4 tablespoon. butter melted ½ cup plain yogurt 1 egg beaten

Mash banana thoroughly with a fork and add to mixer with brown sugar, nutmeg and cinnamon. Mix to combine. In a separate bowl combine oats, flour, wheat germ, ground flax seeds, salt and baking powder. Add the melted butter, yogurt and beaten egg to the banana mixture and mix until combined. Carefully add flour and oat mixture just until dry ingredients are moistened, do not over mix. Fill greased, jumbo muffin cups ¾ full with batter. Bake at 400 degrees for 25-30 minutes or until a toothpick inserted into the center of muffins comes out clean. Remove from pan immediately and cool on wire rack.
