Banana Daiquiri Chocolate Chip-Nut Bread

This is a real crowd pleaser. It is so moist and flavorful, it will be an instant hit!


2 medium loaf pans


2½ cups Flour, not packed 1 teaspoon. Salt 2 teaspoon. Baking Soda 2 Sticks of Butter (softened) 2 cups smashed ripe bananas (about 5) 4 eggs, slightly beaten 1 teaspoon. Vanilla 3 Tbsp Dark Rum (optional) 1 cup Walnuts, coarsely chopped ½ cup Chocolate Chips ½ stick melted Butter Raw Sugar Sprinkles

Preheat oven to 350°. Spay the loaf pans with cooking spray (Pam) Sift the flour, salt and baking soda together and reserve. In a Cuisinart stand mixer or by hand, cream the butter and sugar on medium speed. Add the bananas, eggs, vanilla and rum to incorporate. Add the nuts and chocolate chips, just to mix in. Add the dry ingredients in about 3 intervals. Do not over mix! Pour into loaf pans. Top with melted butter and then sprinkle the raw sugar crystals. Bake for 50-60 minutes or until a toothpick or knife is removed clean. Let cool on rack and enjoy.
