Apricot Pistachio Breakfast Bread

This bread is easy to prepare and delicious too. The bright, sunny flavor of apricots and crunch of pistachios comes through and makes it a perfect breakfast or snack along with a cup of coffee.


Yield: 1 loaf


1 cup chopped dried apricots 2 cups very warm water 1 cup sugar ¼ cup canola oil 1 egg ½ cup orange juice 2 teaspoons orange zest 2 cups all purpose flour 2 teaspoons baking powder ¼ teaspoon baking soda ½ teaspoon salt ¾ cup chopped pistachios

Soak apricots in warm water for 15 minutes. Drain and discard soaking water setting aside apricots. Add sugar, canola oil, and egg into bowl of Cuisinart Stand Mixer and cream. Add orange juice and orange zest to creamed mixture. Sift flour, baking powder, baking soda, and salt together in bowl and slowly add to creamed mixture, stirring until just moistened. Stir in chopped pistachios and apricots. Pour mixture into a prepared 9x5x3” loaf pan. Bake in a preheated oven at 350 degrees for 1 hour or until a wooden pick inserted in center comes out clean. Cool in pan for 10 minutes before removing to baking rack. Cool completely before slicing.
