Pumpkin Bread

This is a wonderful pumpkin bread that could be used anytime during the day as a snack or dessert. It is pumpkin bread with a caramel glaze melted over it. "


3 cups Sugar
2 cups of Pumpkin
4 Eggs
1 cup of Oil
3 1/2 cups of flour
2/3 cups of Warm Water
2 tsp dissolved Soda
1 tsp Cinnamon
1 tsp Nutmeg
1 1/2 tsp Salt
2 tsp Vanilla
Caramel Glaze:
6 tbsp Brown Sugar
3 tbsp Unsalted Butter
3 tbsp Water


Mix sugar, oil, eggs & pumpkin. Separately combine flour, cinnamon, nutmeg & salt. Add to pumpkin mixture. When combined, add soda dissolved in warm water & vanilla. Grease bread pans. Before baking, sprinkle with 1 cup chopped pecans.
Cool slightly. Combine 6 tablespoons of brown sugar, 3 tablespoons butter & 3 tablespoons water. Bring to boil. Will be thin. Pour over warm bread.
