Pumpkin Bread


3 1/2 cups flour (I use a mixture of whole wheat, wheat germ & unbleached white..but all white is okay)
1/2 ts baking pwdr
2tsp salt
1tsp cinnamon
1/2 tsp ground cloves
1/2 tsp ginger (optional..but I like the zing)
1 cup white sugar
1 cup light or dark brown sugar (I like the dark)
2/3 cup shortening
4 eggs
1 can 15 oz. pumpkin or 15 oz. pureed roasted pumpkin
2/3 cup milk
1 tsp pure vanilla extract


Preheat oven to 350 F. Mix together milk & vanilla in small bowl. Sift together flour and spices. In a large bowl, beat sugar, shortening & eggs until fluffy then mix in pumpkin. Slowly mix in sifted ingredients alternating with milk mixture until all blended. Pour into one tube pan or 2 loaf pans. Bake 1 hour. Enjoy!
