For The Macaroni & Cheese
1 LB. Box Macaroni (Any)
1 Cup Monterey Jack Cheese (Shredded)
1 Cup Cheddar Cheese (Shredded)
8-10 Slices Bacon, Cooked & Chopped
2 Tbs. Butter
1/4 Cup Milk

For The Grilled Cheese
4 Slices Provolone Cheese
4 Slices Mozzarella Cheese
8 Slices Bread (Any)

1. In a medium saucepan filled with boiling water, cook macaroni about 7-8 minutes, until al dente. Drain.
2. In the same pot, over low heat, melt 2 tablespoons of butter. Add milk and shredded cheeses. Wisk together until cheese is completely dissolved and melted. Place drained macaroni in cheese sauce and stir well until the macaroni is evenly coated in the cheese sauce. Remove from heat. Cook bacon according to directions on package. Fold in bacon pieces. Grease or spray with non-stick spray a 13x9” pie plate. Spoon bacon macaroni and cheese into pie plate. Bake in 350 degree oven for 30 minutes. Allow to cool.
3. Assemble sandwiches: Butter one side of each piece of bread. For each sandwich, place one slice of bread buttered side down on a non-stick skillet. Place one slice of Provolone cheese on bread, then spoon macaroni and cheese on top and place 1 slice of Mozzarella cheese. Finally, top with one more slice of bread, buttered side up. Repeat process with remaining bread. (You will have leftover macaroni and cheese).
4. Cook sandwiches over medium heat until bread is golden and the cheese is melted, about 3 minutes per side. Slice and enjoy!
