Ingredients

  • Tapioca:
    ¼cup large pearl tapioca, dried
    2cups room temperature water
    Sugar Syrup:
    ½cup packed light brown sugar
    ½cup granulated sugar
    1cup water
  • Tea:
    Water
    2bags black tea
    (or two servings loose tea)
    ½cup half & half
    Ice (optional)

Preparation

  1. 1. Prepare the tapioca: Put the dried tapioca
  2. in a medium bowl and add the room
  3. temperature water. Cover and let sit
  4. overnight to soften. Once plumped, strain,
  5. discarding water and reserving the tapioca
  6. (tapioca should be gummy-like in texture
  7. and taste).
  8. 2. Prepare sugar syrup: In a small saucepan,
  9. combine the sugars and measured water
  10. and set over medium-low heat.
  11. Let mixture heat until all of the sugar
  12. has dissolved. Cool mixture to room
  13. temperature.
  14. 3. Prepare the tea: Put tea into a small bowl.
  15. Put at least 20 ounces of water into your
  16. kettle and select the Black setting. Pour
  17. 16 ounces of the hot water over tea and
  18. let steep 3 to 5 minutes. Strain and cool
  19. to room temperature.
  20. 4. For each serving, put ¼ cup each of the
  21. tapioca, sugar syrup and half & half into
  22. a tall glass. Add ½ of the tea and stir to
  23. combine. For a colder drink, add ice.
  24. Serving note: Traditionally, Bubble Tea is
  25. served with a large straw so the tapioca
  26. can be enjoyed while sipping the tea.
