In some parts of the world, horchata is a beloved drink that uses ground tiger nuts. Other cuisines use soaked white rice blended that with cinnamon and sugar. No matter how you make it, the result is creamy and refreshing. Here, we turn it into a milkshake. We call for a cinnamon-based ice cream, but if you cannot find that, use a high-quality vanilla ice cream and double the cinnamon.
Ingredients
- 2 cups dairy-free cinnamon ice cream*
- 1 cup rice milk
- ½ teaspoon ground cinnamon, plus more for garnish
- Pinch fine sea salt
*If you can’t find dairy-free cinnamon ice cream, use premium vanilla-flavored dairy-free ice cream and increase the cinnamon to 1 teaspoon.
Preparation
- Put all the ingredients into the blender jar in the order listed.
- Cover and blend on MILKSHAKE.
- Serve immediately with a sprinkle of cinnamon.
