Yummy Nachos

Ingredients

Vegetable Oil 1 cup chunky salsa (spicing to your liking) Jalapenos, chopped optional (for a mild taste take out the vein and seeds) 1 lb. ground beef 1 poblano pepper, chopped or you can make it more mild by doing a bell pepper 1/2 cup chopped yellow onion 1/4 tsp. ground cumin 1 cup of refried beans - optional 2 cup shredded Cheddar cheese, divided 1/2 cup beef broth or water 4 cup nachos - I like the tostitos with a taste of jalapeno 2 ripe tomatoes, diced - you can used canned but I prefer the taste of the fresh your toppings: sour cream green onions More salsa More Cheese - whatever you like

Instructions

Brush an 8*13 pan with the oil. Mix salsa and jalapeno in small bowl Brown the ground beef, peppers, onions. Drain. Add cumin, beans,1/2 the cheese, half of salsa and pepper mixture and water. Cover bottom of dish with nachos. Cover nachos with meat mixture and top with remaining salsa mixture. Add nachos on top. Bake at 350° for 20 min. Take out and add the rest of the cheese and bake until cheese melts (about 7 min) Garnish and enjoy.
