Ingredients
16 oz. sharp cheddar cheese
2 cloves garlic
½ medium shallot
8 oz. cream cheese, room temperature
4 oz. diced pimentos, drained
2 Tb. lemon juice
2 Tb. Worcestershire sauce
1 teaspoon. salt
½ teaspoon. black pepper
¾ cup chopped walnuts

Instructions
Preheat oven to 350°.
Grate cheddar into Cuisinart Food Processor work bowl fitted with medium shredding disk. Switch to steel blade. Press garlic and shallot into work bowl using garlic press. Add remaining ingredients, except walnuts, to work bowl. Process briefly until uniform throughout. Taste and adjust seasonings as desired. Chill in refrigerator at least 1 hour.
Place chopped walnuts a pie plate or similar dish. Cook in a 350 oven for about 5 minutes or until fragrant. Set aside to cool.
Remove cheese mixture from refrigerator and use hands to work into desired shape. Roll in walnuts to coat. Store in refrigerator up to 2 days or until ready to serve.
