A wonderful appetizer that tastes just like the real thing! It is totally vegetarian and much more healthful than chopped liver.
1 Can LeSeur Baby Peas
¾ cup chopped walnuts
2 hard-boiled eggs
1 cup of chopped onion

Saute onion in a little vegetable oil (I use Canola). Drain the peas and put into the food processor and pulse until smooth. Add hard-boiled eggs and chopped walnuts and pulse until mixed together. Stir in the sauteed onions. Add salt and pepper to taste. Chill and serve on crackers or party rye! Yum!
