Stuffed Portabellas

This meaty appetizer could also be a very fulfilling meal. It's vegetarian, low carb, super quick, and absolutely delicious! What more could you ask for?




4 portabella mushroom caps, cleaned 2 tablespoon montreal steak seasoning ¼ cup balsamic vinegar ¾ cup olive oil 1 bunch baby spinach leaves 1 cup crumbled gorgonzola cheese 2 cups shredded mozzarella cheese 4 slices of prosciutto(leave this out for a vegetarian dish)

Mix together your olive oil, balsamic vinegar, and montreal steak seasoning. Brush the mixture generously on the inside of the cleaned mushroom caps. Lay in a handful of spinach, a slice of prosciutto, the gorgonzola cheese and then top with the mozzarella cheese. You can bake it in the oven at 350 degrees for 15-20 mins, or until the cheese is melted and the mushroom is tender. You can also put these on a medium high grill for about 10 min.
