These quick and easy tuna bites have all the flavor of your favorite sushi roll, but are low-carb and under 50 calories each!
1 Small Cucumber
1/2 pounds Raw, Sushi-grade Tuna Of Choice. (I Used Yellowfin)
1 Tablespoon Green Onion, Diced
1/4 cups Plain, Nonfat Greek Yogurt
1 teaspoon Sriracha, Or To Taste
1/4 teaspoons Garlic Powder
Salt To Taste
1 Sliced Nori (seaweed) Sheet, To Garnish

1. Slice the cucumber into 1/4-inch thick circles and lay them out onto a plate.
2. Dice the tuna and throw it into a medium-sized mixing bowl with the green onions.
3. Into the bowl, add the Greek yogurt, Sriracha, garlic powder and salt. Make sure to taste and adjust the salt to your preference.
4. Scoop about 1 tablespoon of tuna onto each cucumber slice and garnish with additional Sriracha and sliced nori (if desired.) Alternately, if you want it to taste even more like sushi, mix some extra minced nori into the tuna mixture.
