Easy, healthful and delicious addition to a Summer meal
1 1/2 lb. fresh string beans (ends removed)
2 cloves fresh garlic chopped fine
1/2 large bay leaf (or whole small)
Salt and pepper
1/4 cup extra virgin olive oil
1/2 cup wine vinegar or balsamic vinegar
1/4 tsp. sugar

Cut cleaned string beans to desired length or leave whole. Steam until tender (or to desired crispness) and bright green for approximately 10 minutes).
While the beans are steaming, cut garlic cloves into a fine chop.
Remove steamed beans from steam pot and plunge into very cold water to stop cooking and retain bright green color.
In a wide, low bowl or dish, add cooled string beans, chopped garlic, olive oil, vinegar, salt & pepper and bay leaf. Stir until beans have been coated.
Cover with plastic wrap. Place dish in refrigerator to cool thoroughly and marinate(about 1 1/2 hour). Stir one more time during cooling process. Taste to balance seasoning before serving.
