Perfect appetizer for Easter get together, brunch, bridal and baby showers
Ingredients
1 pkg smoked salmon (about a 4 oz pkg)
½ cucumber, washed, seeds removed, chopped into one inch long thin-ish chunks/spears
4 oz cream cheese
2 dozen won ton wrappers

Instructions
1.Spray a mini muffin tin with cooking spray
2.Carefully place one wrapper in each muffin cup – don’t let it tear, just gently press it down so it’s flat on the bottom, to make a cup
3.Lightly spray the top of wrappers with cooking spray
4.Bake at 350 for 10-14 minutes, or until won tons looks done and crunchy – careful not to let them burn!
5.Remove pan from oven and carefully take out the won ton cups and place on a serving tray (if really hot use rubber tipped thongs)
6.Scoop a small dollop of cream cheese into each cup
7.Tear off bite sized chucks of the smoked salmon and place in each cup
8.Place the long chunk of cucumber into each cup
