A delicious blend of lobster claw meat and eggplant, mushrooms and Italian Sausage & Mushroom Sauce.
1 large eggplant
½ lb of lobster meat
10-12 oz package of Baby Bella Mushrooms
24 oz bottle of RAO's Dinner to Go Italian Sausage and Mushroom Sauce

Skin and cube 1 large eggplant to small bite sizes. Microwave for 4 minutes with a tablespoon of water. Let sit for 5 minutes and drain.
If you can buy canned lobster meat use that or boil 2 1.25 lb lobsters to yield about a ½ lb. Boil for 5 minutes. Cut the lobster meat into very small pieces.
Clean and remove the ends of the stems of the mushrooms and cut stems and caps into small slices. Baby Bellas are basically small light brown crimini mushrooms and are essentially vegetarian steak and very delicious. Microwave these for 3 minutes, drain and wash.

In a casserole type container, combine the lobster meat and mushrooms and stir in ½ of the RAO's Sauce. Place this in a sauce pan, cover, and allow to simmer on your range for 5 minutes. Stir and add sauce until you have the consistency that appeals to you.
