Healthy, easy tofu snack.
1 lb (16 oz) Azumaya Lite Extra-Firm tofu
Weight Watchers points = 2.5
Preheat oven to 400°F.
Slice tofu into 6 1/2-inch slices.
Place tofu on several layers of paper towels. Cover with additional paper towels and top with cookie sheet. Place heavy object(s) on cookie sheet to press water out from tofu for 30 minutes.
Coat cookie sheet with cooking spray.
Cut tofu into cubes to yield 9 cubes per slice. Place on cookie sheet and brush with soy sauce. Coat tofu with cooking spray and place in oven. Bake for 25 minutes.
