Pear & Feta Salad

Serves 2 as an appetizer, 1 as a main course


2 cups mixed salad greens 1 pear ¼ - ½ cup chopped pecans ¼ - ½ cup dried blueberries (or dried cranberries) ¼ cup crumbled feta cheese olive oil and balsamic vinegar, to taste salt and pepper, to taste

  1. Place the salad greens, pecans and dried fruit in a large bowl. Stir to combine.
  2. Chop the pear into small pieces and place in bowl.
  3. Sprinkle with feta cheese, salt, and pepper.
  4. Drizzle with olive oil and balsamic vinegar and taste. Adjust ingredients to your liking.
  5. Enjoy!
