Add one ingredient at a time to the food processor, starting with the onions, peppers, and celery last on the chop fine setting. Lastly, add the cilantro, Rotel and diced tomatoes, set food processor to mix setting only. Refrigerate until all ingredients are chilled and flavors are combined nicely, 2-3 hours. For chunkier salsa, hand-dice all ingredients to desired size all about the same size and lastly add finely chopped cilantro and Rotel. Serve with sour cream, shredded cheese over a bed of Scoops corn chips. Microwave or toast briefly in the over to melt the cheese if desired. Substitute or adjust ingredients to fit your individual taste; garlic, parsley, additional Jalapeno peppers, seasonings, etc.
