Mushroom Pate'

This is a faux chopped liver appetizer that is vegetarian and deliciously addictive.

1 cup sliced fresh mushrooms 1 cup chopped fresh onion (sweet type preferred) 3 tablespoons butter 3 hard-boiled eggs 4 ounces shelled walnuts 1 teaspoon salt ¼ teaspoon pepper

Saute the mushrooms and onions in a large skillet with the butter, salt and pepper over a medium heat for 4 to 6 minutes stirring frequently until light brown. Place the cooked mushrooms & onions into a food processor along with the walnuts and hard-boiled eggs. Use the metal twin blade cutter and run the processor until a homogenous brown paste is created (about 30 seconds). Scrape down any chunks from the sides of the processor with a spoon and run it again for 15 seconds. If you don't have a food processor, you may thoroughly mix the ingredients in a bowl and run it though a grinder, or use a potato masher until the mixture is homogenous. Place in refrigerator to chill for 2 hours then serve with an optional parsley or cilantro garnish. Goes very well with most types of crackers.
