This recipe is dedicated to my Italian boyfriend's mom.
She is 87 years old and dad is 91 years old.
We are getting together this mother's day and can't wait to bring these awesome one of a kind appetizer for the whole family.
I am making 3 times the recipe since it has been so popular.
12 mini crab cakes
2½ cups crab meat of Dungeness (about 2 Dungeness crabs)
1 cup Mayonnaise
1 tablespoon Dijon mustard
salt and pepper to taste
1 cup Green Onions, chopped
1 tablespoon chopped thyme
2 tablespoon chopped chives
¼ cup breadcrumbs

Mix all ingredients except the crab meat.
Then fold in the crab meat.
Using mini-scooper, scoop and pan fry in peanut oil about 5 minutes each side.
