Great appetizer for a fishing trip of a lifetime or just to have a really nice simple appetizer.

2 Fillets of Walleye
1 large lemon
1 teaspoon Kosher salt
¼ teaspoon fresh ground black pepper
1 stick of salted butter

Poach walleye fillets until almost flaky. Cube and set aside. In a sauce pan melt putter and salt with zest of the lemon. Stir and add in cubed walleye chunks. Add in squeezed lemon juice. All that you can get out of the lemon. Stir and you are ready to serve after you add some pepper.
