Leek Confit

Wonderful as a topping for crostini with goat cheese or roasted fingerling potatoes. as a spread, or omelet filling.


¼ cup unsalted butter 4 large leeks, halved lengthwise and cut in ¼" slices 1 teaspoon salt

Preheat oven to 400° Put butter and leeks in ovenproof casserole. stir in salt. Cover and bake for 30 minutes or more, stirring occasionally. until very tender and creamy
