Jamaican Beef Patties


6-7 patties


Filling: 1 cup bread crumbs 1½ cups ground beef 1 teaspoon each black pepper and salt ¼ teaspoon dried thyme leaves Grated ginger ½ tablespoon scotch bonnet pepper diced 2 stalk scallion chopped 1 lg onion finely chopped 2 tablespoon curry 1 teaspoon soy sauce ¼ beef stock 2 tbls butter Ground coriander ¼ teaspoon sugar ½ teaspoon allspice 1 egg beaten Pattie Pastry: 8 oz plain flour 1½ teaspoon ground turmeric Pinch of salt 4 oz cold butter, cut into small cubes ½ egg, lightly beaten, to glaze

Filling: Sauté scallion, onions, ginger, thyme, pepper in a frying pan with butter. Add beef mince in frying pan and fry until mince is cooked. Add scotch bonnet, pepper, soy sauce, sugar, salt, coriander, curry, beef stock, allspice and bread crumbs. Place filling in a food processor. Ensure that the beef is wet when placing it on the patty crust. Place at least 3 tablespoons of filling on each circle then fold and crimp with a fork the corners. Brush a small amount of egg on each pattie. Pattie Pastry: Put the flour, turmeric and salt in a bowl and rub in the butter. Add 4-5 tablespoon milk and mix. Roll into a ball and chill for 30 mins. Preheat the oven to 375 degrees. Cook till lightly brown
