Small appetizer pizza with grilled vegetables and goat cheese.

Ingredients

1 store-bought mini pizza crust 2 tablespoon pizza sauce (recommend: classico) ½ cup eggplant ½ cup zucchini ¼ cup red onion ¼ cup roasted red pepper 2oz. goat cheese extra virgin olive oil Herb de Provence Salt and pepper

Instructions

Heat pizza stone on grill, season vegetables with olive oil, salt and pepper, and herb blend. Grill vegetables until almost done. You want to leave a bite to them. Spread pizza sauce onto pizza crust. Dice the grilled vegetables, add to pizza and crumble goat cheese over the top. Drizzle with more olive oil and place pizza stone on the grill. Heat through, pizza is done when the crust is golden brown on the bottom.
