Garlic Ramp Pesto

We use this, mixed into cream cheese, as a spread for crackers. It is also good on pizza, pasta, and as a spread on bread.


About 1-1/2 cups


2 oz. parmesan or asiago cheese 1 bunch of garlic ramps 2 cloves garlic, pressed ½ cup walnuts, lightly toasted ⅓ cup olive oil juice from ½ lime sea salt and pepper to taste

Place cubed parmesan or asiago cheese into work bowl and process until coarsely chopped. Wash and chop the garlic ramps. Add to cheese, along with pressed garlic and walnuts. Process until mixture is coarsely chopped and well mixed. While processor is running, pour in olive oil and lime juice. Process until it is a smooth paste. Salt and pepper to taste.
