We love to have a fresh salsa at all of our BBQs, and this is one of my most requested recipes. It is so light and delicious. Sometimes we serve it on top of grilled lemon chicken, and sometimes we serve it with grilled pita bread, or chips on the side.
2 cups diced zucchini
4 large tomatoes, seeded and diced
1/2 cup diced red onion
3 Tbsp fresh chopped Italian parsley
1/2 cup pitted and chopped Kalamata olives
3 Tbsp fresh grated parmesan cheese
1 Tbsp fresh lemon juice

1. In a large bowl combine the zucchini, tomatoes, red onion, parsley, olives, parmesan cheese, and lemon juice.
2. Gently toss everything together until just combined. Let sit at room temperature for 15 minutes.
3. Serve with grilled pita wedges, crackers, or chips.
